Sexy Indian Chicken Mango Salad

 

Ingredients
• 4 chicken breasts
• 1 ripe mango, not too soft, dice small
• 1/4 cup unsalted toasted cashews chopped (optional)
• 1 small red onion, chopped
• 1 cup Sexy Low Fat Dip
• 1 tsp Sexy Spice Indian (or to taste)
• 1 tbsp olive oil

Method
Slice all 4 chicken breast in half so you have thinner chicken breasts, in a small bowl rub in olive oil Sexy Spice Indian and let marinade for 5 minutes. On a medium high heat pan fry chicken breasts until cooked. Transfer to a plate and refrigerate until cooled. Once chicken has cooled cut chicken breasts in to 1 cm x 1 cm pieces. Combined all leftover ingredients including diced chicken breasts in a medium mixing bowl and fold all ingredients until a uniform consistency has been achieved.
